I like thin fried with a light crust. Not too thin, but I don’t care for thick fried pieces.

Nobody likes whole fried catfish? I love it but we always filet it and fry it since the majority of the house likes it that way.

it's best when you cut a big thick piece at a sharp angle so you get the best of both worlds. Thin and crispy on one side, meaty on the other.

I realize that thin fried (IE Middendorfs) is mostly batter, but I don't like a thick greasy slab of fish either. I would feel leery of ordering something named "thick" catfish.
Somewhere in the middle is the sweet spot. Locally we have Mandeville Seafood and their fried catfish is money.

What about the catfish strips at Spahr's? that's my favorite. I'm not a fan of whole filet fried catfish

I like both.
I do hate when a filet is so thick that it falls apart when you pick it up and I hate when its so thin that the filet is hard as a rock.

Same here. When frying at home, I like to portion the filet into 2 or 3 pieces, slicing at a long angle so that it comes to a point and you have both in one piece.

I much prefer thinner cuts of fried catfish.
I don’t care when it’s paper thin like Middenforfs. They changed something around five years ago and it’s too thin.

Depends on where it is from. It may not be snapper, cobia, or halibut, but catfish can be pretty tasty if wild caught from a pretty clean river.
