Looking for something different to do with my turkeys I shoot this year. Anyone have anything interesting they do with them besides smoking and frying?
I was thinking of grinding and making some breakfast sausage out of them. Anyone have any tips on that?

Yes. We ground up last year, and made stuffed bell pepper. Excellent.

I have heard of people pounding out the breast meat like wienerschnitzel and batter and frying it, like wienerschnitzel. Serve with a gravy like country fried steak. I haven't done this, but I want to try it.

Easy easy.
Take dill pickle juice and brine the full turkey breast in a ziplock bag in fridge for 18-24 hours. Coat with Louisiana Fish Fry. Fry until cooked.

I pressure cook the legs and thighs and make tacos. Fajitas sometimes with the breasts. Also like to cut them up into nuggets and marinate in ranch dressing and pickled jalapeños with some of the juice then coat in chicken fry and fry them.

I love to use the thighs and legs in a gumbo. Smoked them for 30 min to an hour. Put them in a slow cooker to break down, use that stock as your gumbo stock.

You just gave me an idea the next time I have turkey breast meat.
I love to make Chicken Cordon Bleu and I bet a turkey breast would be a great substitute. Besides, a single breast fixed that way will probably feed 3 people easily.
My Cordon Bleu recipe:
Preheat oven to 350 degrees.
Pound out a boneless chicken breast until it's about 1/4 inch thick. Lightly coat on both sides with Dijon mustard. Dredge in AP flour seasoned with salt, pepper and garlic powder.
Lightly brown the breast in a pan with olive oil then remove and set aside.
On a lightly greased sheet pan place the breast and top with Canadian Bacon and put in the oven to cook for 15 minutes. Then add slices of Swiss cheese to the top and bake until the cheese melts and lightly browns.
Whie the chicken is cooking, cut up an onion in thin slices and crush a couple toes of garlic. Brown them off in the pan you browned the chicken in then add fresh spinach and let that sweat down for about 15 minutes.
To serve, take some smothered spinach and drain it to get a lot of the liquid out and put that on your plate and place the chicken breast atop it.
Do what you want for sides to make a complete meal out of it.

Cut breast into nuggets.
Coat with ranch dressing and jalapeño juice. Let set for at least 6 hours. Then coat with Andy's chicken batter and fry. I like to put some jalapeño slices in when I pour the juice and fry them to.

I’ve smoked and then made into turkey salad. Grilled skewers are always good.

Quick and easy on BGE or similar:
1/2” breast strips or cutlets. Poke with a fork throughout.
Margarita premix (just a splash or two, don’t have to get crazy) + whatever seasoning you like on chicken for marinade. Cook indirect with some pecan chunks then sear right at the end or vise versa. Doesn’t matter. Everyone in the fam destroyed it.

The dish takes its name from the Japanese words tonkatsu (for pork cutlet) and donburi (for rice bowl dish).
It's also done with chicken.. Look up recipes
