I'm doing a 6 gallon gumbo on Saturday and I am going to start my roux tonight and store it until Saturday. It is going to be 8 cup to 8 cup oil and flour. Sure I get that it's not 1 cup roux but for arguments sake I used those numbers. Point is I should be able to do the math and still use the same ratio or being that it is that big should I change it up....

Chicken stock in seafood gumbo? - yomamak
Anyone ever use chicken stock for a seafood gumbo? I'v done it before and remember it being fine. Last seafood gumbo I made with shrimp and crab stock just seemed to be to much seafood going on. Thinking about trying it again....

I recently acquired a Lodge enameled cast iron dutch oven. I have read and heard that you're really not supposed to use high heat on them. What do you guys do on here? I did red beans last night and the bottom of the pan was hard to clean....
