Cut carrots into rounds. Place in a pot with a little water, butter, Worcestershire sauce, salt and pepper. Cook covered on medium heat until tender. Cook until tender and sauce is reduced....

Yes. I do this every year after Thanksgiving with left over oyster dressing. I roll it into logs in Saran Wrap and place them in Ziploc bags for the freezer. I use the dressing to stuff double cut pork chops. ...

Depends on how dark you cook your roux. The darker it is, the less thickening power it has. I cook a very dark roux for seafood gumbo. For one gallon of stock use 3 cups of fat (I use butter) to 4 1/2 cups of flour. ...
