When can I start booking flights for trip in May 2018?

Going to Europe and what's the best way book a multi city?
Just book New Orleans to Paris one way and Rome to New Orleans one way, and just buy tickets for city to city when I'm there?

About June 2017 and directly with the airline is always the best to me.

Depends on where you're going. If it's europe, asia, or someplace far away, you can book now. If it's domestic, southwest has their next schedule update on december 6th to include may flights.
Edit: did not see it said 2018. So you can book international this coming june and domestic likely next december

I'm a little off this morning, needed my coffee to wake up .
Most of the time the cheapest tickets are for roundtrip, say New Orleans to Paris to New Orleans. If you want to do a multicity ticket, just keep an eye out for one-way cheap fares and if you see two of them for there and back book it, even if its not for the cities you necessarily want to go to. A month or two ago (October/November) there were some great one-way fares to Europe so it ended up about $250 or $300 each way on multicity tickets. Your worst situation would be buying a roundtrip ticket (say to Paris) and on the way back to the US book a flight back to Paris and pick up your original itinerary from whatever city is your last stop. It's a pain but sometimes its the much cheaper option.

Most big airlines charge full rountrip fare for a one-way across the Atlantic. Did a cruise from Miami to London years back and had a really hard time finding an affordable one-way flight back. And I find multi-city flights aren't that much more expensive than a typical round-trip. Maybe 5-10% more in my experience.
In summer or fall 2017 I would plug details into a flight search engine (like Google flights) as a muli-city flight then book directly with the airline that gives the best rates/times/connections.
For Paris to Rome I would book that seperately 3 months before you leave. If air-france or alitalia or one of the bigger airlines can't fly you to Rome for less than $100 then I would look at the many cheap european airlines. There are some search engines for this purpose, like "flylc.com".

Are you booking an award trip? If so, United allows a stop over and an open jaw. Google and you will get more info.
