I'm going to Cebu City, Philippines next March

I have an old friend who's been hounding me to come out and visit him. After moving from NOLA to Seattle then eventually to Vancouver he hooked up with a real estate development company who was building a resort out in Cebu City. Anyway, he's getting married in March at his resort so I agreed to go.
First I am stoked, it should be an awesome time but g'damn...25-40 hours travel time each way. I've flown to Europe and to Hawaii (16 hours travel time coming back) but I don't know if I am prepared for this.

You fly Economy or Business? If Economy, then the best option to get to Houston and catch Eva air flight to Cebu or Manila via Taipei. Little over 20h including stopover. This is what we are planning to do next May. Usually prices out at under $690 RT.
If business, then you don't have much to worry about anyway.

Besides being the top (maybe Emirates overtook them now) airline in the world, the flight is comfortable and with a special deal, you can fly there for 800 bucks (from IAH FYI).
I didn't catch from where you live (maybe NOLA?), but Sayang Holidays are agents of SIA (Singapore Airlines) and they have some great deals quite often. We fly there for biz quite often and paying 2k for economy wasn't working so Sayang came to the rescue.

Just did 27 to Thailand and 34 coming back, that flight across the ocean can be a challenge especially if you have the middle seat or who sits next to you. On the way over you will swear "never again" then you get there have an amazing time and it doesn't seem so bad.

The flight on Eva works a little better time wise. As opposed to arriving at midnight Philippines time (Asiana) I can get there about 9 am on Eva for about $100 more.
So, I leave LAX on Wednesday, March 8 and fly 14 hours Taipei, Japan arriving at 6:15 am on the morning of Friday, March 10. Is 40 minutes enough time there?
Then, from there it's a three hour flight to Cebu arriving at 9:15 am.

Then coming back I depart on Wednesday, March 15at 11:05 am local time and land in Taipei at 2pm. I then depart from Taipei 5 hours later at 7:20 pm and arrive to LAX at 3:50 pm the following day, Thursday, March 16.
This sound right?

Don't forget the International Date Line, which oddly enough, I don't see any dates showing on your posted itinerary.
I left Shanghai for Chicago at 5PM, Tuesday in China and landed at pretty much the same time in Chicago on the same date (Tuesday).

Again - you could drive/fly to Houston for cheaper and catch the following flight out of there.

You have a ~24H layover in Taipei which gives you enough time to go out and explore the city in the same itinerary if you are up for it. Taiepei looks pretty cool in pictures.

I just looked. Appears that with SIA, you'd have to make two stops which will be a PITA if your intent is just to get there.
Remember for Int'l flights, as Teddy said, the departure and arrival are always local time relative to where your flight is leaving from/landing.

Also, I recommend booking directly with the airline on their website when you can instead of going through an OTA. These tickets are $15-$30 cheaper on eva air usa website. And should anything go wrong, it is easier to solve problems directly with the airline.

Ya, looking at your itinerary you are going to leave on Wednesday and arrive Friday. You lose 1 day on the date line and 1 "day" because your flight leaves so close to midnight.
On the way back, your whole itinerary is the same day because you gain the day back at the date line.

So it leaves on Wednesday and arrives on Wednesday. Makes sense now.
