Budget of up to 400 bucks a night.
Usually we would get a villa and have a bunch of people split the cost.
Just going to be my wife and I. Just want a place to relax for a few days.

You're getting a hard time, but I've searched for this a ton over the years and came up with very little. You'd think with all of the beaches along the panhandle, there would be places catering to couples who want private accommodations.
AirBnb wasn't as well known last time I looked, so you may have better luck there. But you're right. The definition of "private" on these sites is pretty broad. AirBnb considers a basement or garage apartment to be "private" when it's not - there is still a family inside the big house you're attached to.

I found a house. Paid out the arse for it in the shortest destination of all time (the northshore).
But I only needed a place for a few nights to relax and recharge.
Do a little cooking. No phones. No electronics.
Will report back on the place and let others know if it is worth it.
