What do I need to control lights with iPad/iPhones? Do I need to buy a controller or can I just by certain bulbs.

CAD has a home automation thread on here that discusses them extensively. I currently have 6 of them in my house all controlled by the hub. I've also got my nest, schlage deadbolt, and 4 dropcams. There can be some growing pains getting it all to pair initially but WINK gave me great tech support over the phone.

Wemo is a simple solution. They have a starter kit for 100 bucks that has the control box and two LED bulbs and additional bulbs are 30 each. Good lights and you can dim them from your iPhone too.

Question about wifi light bulbs - do you have to leave the light switch on, and can only control the lights through the Wink app?
I've set up a Liftmaster/Chamberlain myq system. There are product codes for Liftmaster and Chamberlain, but they are the same product. I have:
Liftmaster 828LM Garage Door Opener Internet Gateway
LiftMaster 888LM Security+ 2.0 MyQ Wall Control
Liftmaster 823lm Remote Light Switch
I can open/close my garage door and turn on/off lights from their app, or from a website. The garage door can be controlled through the Wink app, but the light switches are not supported at this time.

keep in mind most lightbulbs are not "wifi" but "wifi-like" using a technology such as zigbee or z-wave.
zwave seems to be the more popular standard and is essentially a low-power wireless signal that is designed for products such as door locks and lightbulbs.
wink works with most bulbs on the market (hue, ge link, etc.)
the advantage to wink is its a consolidated app for all these devices and you can build robots (or 'scripts' or 'scenes') where you can control several things at once.
for instance, if my smoke detector goes off, wink will turn on every light in my house & unlock the front door.
eta i have the myq as well. wink frickED IT UP in the latest update so don't bother trying to add it right now until they figure it out.

Does the light switch have to be on all the time? What happens if I turn the light on with the app, then my wife turns it off with the switch? I won't be able to turn it back on with the app right?

winner winner chicken dinner
thats the problem here. unless its in a place where you can physically prevent it from being turned on/off you will have this problem.
thats why the wifi wall plates are more popular..but have their own issues ($$$, etc).
i'm taking all my CREE bulbs with me to my new house..LOL..never thought i'd see the damn day where i had to remember to pull all my 'good' lightbulbs out and pack them.
THANKS OBAMA

Are you happy with your schlage deadbolts?
I just got a nest and myq garage. Trying to decide what other products I should purchase.

Yeah all my brilliant programing is down the hole cause my family can't get it in their heads to leave the damn light switches alone. But, it was a cheap as heck deal so I don't sweat it.

Absolutely love it. My babysitter has a code, my in laws, my wife and I all have our own codes as well. I had the bug guy come the other day, I opened my app and unlocked it and saw on the camera when he left so I locked it back.

its like 2 clicks in wink to set up a robot script.
'brilliant programming'
eta all wifi bulbs have this issue genius, not just the 2 $15 ones that came with that hub.

missed the part where you have a schlage as well.
its the BOMB. i freaking love mine.
you should also point out that if you are using WINK to control it, you can not only see when it was locked & unlocked, but the PERSON who did it.
i especially like that feature because you can temporarily grant access then revoke it later without reprogramming the door codes on the door itself simply by removing their email address from the phone app.
bug guy done? delete his profile from the wink app. DONE.
supposedly more of the zwave features (changing codes, etc.) that are part of schlage are coming soon to the wink hub. those additional features exist, the wink UI just hasnt tapped into those API calls yet.

WHY
Wifi bulbs?
Why not Wifi dimmable switch that hardwires? Or does that product not exist?

what if you have a switch that controls something like this:
...and you want one bulb to be off, one to be at 100% brightness and the other at 20% brightness?

Are there any double sided deadbolts? I don't want someone to be able to break the glass and reach in to unlock the door without a key. All of the locks I've seen have a key/code on the outside, but just a turn to unlock the inside.

This would create a huge fire safety issue. Should the house catch on fire, the occupants wouldn't be able to escape unless they had a key.
