For me: self driving cars.

I'd say car innovations in general
Cars have incrementally improved a drastic amount over the last 20 years
I'll be interested to see what the quality of cars will look like in 5 years

I am incredibly happy with my 60" LG plasma and a simple Sony Soundbar + Wireless Sub. With concrete floors and high ceilings we are in a theater nightly.
I am not much for cars as I am utilitarian and pragmatic (read: a terrible skinflint) when it comes to cars.
What interests me the most is the ability of technology to bring down fixed and variable rate costs within the home. Grocery shopping. Electricity usage. HVAC. Security and monitoring. Of course this goes hand in hand with whole home automation, but not so much with multi zone music per se but more along the lines of reducing costs for families for utilities and groceries while increasing your level of enjoyment derived from being at home, whether having better groceries to cook or music to stream or movies to watch to entertain...a house that is more responsive and customizable has the ability to make our lives both easier and more enriching.

I'm interested to see how enterprise level all flash arrays, which are slowly becoming a bit more affordable/mainstream, will change the IT industry.

Commercial fusion reactors.

Well we keep hearing about these damn amazing batteries that will improve the hell out of all aspects of life which require power, yet years keep going by without seeing any practical use of the tech.
I want to see those batteries.

How about batteries that charge wirelessly over airwaves.
I like that and the glass Pyrex is making.
And space elevators.
And flexibility of solar power cells.

Cloud Computing- specifically the improvement of load balances.
I work in the Cloud computing arena and my team are working on providing cost effective solutions to the corporate world as well as individuals. Load balancing appeared as critical issue in cloud computing because of heavy workload the servers undertake.
Cloud load balancing helps enterprises achieve high performance levels for potentially lower costs than traditional on-premises load balancing technology. Cloud load balancing takes advantage of the cloud's scalability and agility to meet rerouted workload demands and to improve overall availability during deployment. Cloud Computing will undoubtedly, explode in the next 5 years to an astromical level.

I ended up going hybrid with Nimble. Even that is pretty smokin for our workloads.

My boss wants to stay with the big established companies like EMC, NetApp (bought Solidfire,) HP, etc...
I mean Solidfire is good enough for PayPal and eBay. It can probably handle us.
