What's going on? Updated it a few weeks ago. Went to check a list, nothing.

It happened to my wife's iPhone too.
Check your notes via the email you have linked to your notes app... If you have gmail linked to it, go to your gmail and click on the notes tab and they should be there. I don't know why it happens, but apparently it happens often to the sucky iphone. LINK

Apple has a history of pushing updates that lose contacts and other things. Do you have your notes backed up to the cloud?
