I have 5.0 on my S5; however, how do I get 5.1? 5.0 has been full of bugs since it installed. Hate it.

Doesn't seem to be draining any faster. This is weird

Just got the notification for OTA update on my verizon LG G3.
It looks like it's 5.0. Should I let it update or will 5.1 be OTA as well?

They should be putting the update out soon.

Update... Verizon was the last major carrier to update its G3. It'll likely be months before we see 5.1

Have it on my LG G2, no problems. OTA update

Have it on my Nexus 5 and I hate it. Battery drain is horribly bad. I have to keep phone in airplane mode until I need to use it.
Browser randomly closes, keyboard disappears whenever it feels like. Auto rotate stops working randomly.
The phone really sucks now. I wish there was a way to uninstall without completely wiping.

and I really really dislike it
There's barely any difference. Most of the changes from 4.x to 5.x are internal. There's several UI changes but I don't see anything that would make one's experience so bad.
If you want a phone that's "locked" and the carrier/manufacturer decide what to put on YOUR phone, then get an iPhone. Androids are made to be customized to the individual user. If you don't like it the way it comes out the box(or out of the update in your case) then go through the settings menu by menu and change it to your liking.
A user above noted he lost his particular vibration and controlling music from his lock screen. I remember seeing setting options for both of those issues when I went through all the setting menus and if you can't change those options from the phone setting menus, check the particular app menus(messenger and music apps, whichever you use). If the apps themselves don't allow the changes you seek, look for a different app! I know for a fact the Textra messaging app allows me to change the vibrate pattern to about 5 different settings.

Also, I can't control my music from the lock screen anymore.
Try this: Go to settings, sound and notification, scroll to the bottom and then turn on lock screen notifications. Then you'll have it back

Running 5.0.something Cyanogenmod nightlies. It's great, no issues so far, definite battery life boost.

If you're truly that unhappy with the 5.0 update, you can flash it back to 4.4 fairly easily if you understand basic rooting and such. (You're not rooting the phone, but the process used to flash it back to a different version is similar to rooting)
It involves downloading the KDZ file (basically the entire rom and op system for the phone) for the version you want. The version on the Verizon G3 prior to Lollipop(version 23C) was KitKat(Version 12B). You can download the KDZ and the software needed to install it here: LINK

Just updated using Kies on my Verizon Note 3. So far just a different layout, but I'm used to it from using my Nexus 10.

These folders are ugly as hell on the home screen.
I also hate the way they made lock screen notificatoins bigger. I liked them at the top of the screen with smaller notification icons.
