What is the best way to get into watching and learning all the rules and shite?
I've watched a few matches and have been very entertained even though I don't know shite about it.
TIA

Saturday and Sunday mornings on NBC Sports Network. Premier League is on almost every weekend. Just watch the games and watch the highlight shows (Match of the Day; Premier League Review Show) and you will start to pick up the nuances.
As for the rules they are really pretty simple. Is there anything specifically that you don't understand that we could help explain?

Not really anything in particular, I know virtually zero about the rules.

This may sound silly, but try reading the soccer Wikipedia page.

A buddy of mine said playing FIFA helped him learn a lot.
Still not sure if he was serious.

LINK
If you're interested in the rules, this is a link to the rule book. Otherwise, just start watching games. Wake up early on Saturday. NBCSN starts showing EPL (English league) games at 6:45, FS1/2 starts showing Bundesliga (German league) games at 8:30.
NBCSN will also have a pregame show that will preview all of the EPL games this weekend.

FS1 and 2 has Bundesliga.
BeIn has La Liga, Serie A, and Ligue 1.

Is there a certain league (country) you would be most interested in?

We will also have a gameday thread on here. If there's a game on TV, someone on here will most likely be watching it. Follow along and ask any questions as you think of them.

It's a great way to learn teams and players.
You'll pick up a lot by just watching on TV, too.
NBC and NBC Sports Network have the Premier League (England). It's not the best league in the world, but it's probably the most popular, especially in the U.S.
FOX and FS1/FS2 have the Champions League (the best clubs from each league in Europe have a massive competition during the middle of the week, league play is usually on the weekends) and the Bundesliga (Germany). The Champions League is the biggest club competition in the world. The Bundesliga, to me, is quite fun to watch...it has a more attacking, end-to-end style compared to the English league. ESPN 2 has some Champions League matches, too, now that I think about it.
BeIN, which is more of a premium channel on cable and satellite sports packages, has La Liga (Spain), Serie A (Italy) and Ligue 1 (France). These are the rest of the big leagues. La Liga has FC Barcelona and Real Madrid, the two biggest clubs in the world.
If you hang around this board enough, Mr. Personality will pester you to death about Russia, which is his shtick on here. But the Russian league, along with the smaller European ones and some South American ones, are mostly available through online streaming.
And although it just ended its season last weekend, MLS (America) is on FS1 and ESPN channels mostly. It's been around a fraction of the time as the big leagues and is in a country that isn't obsessed with it, so the quality of play isn't as world class. However, it's a fun league to follow...lot of speed and excitement to matches...and it's growing. If you live near a MLS team, I'd suggest watching them when the season starts back next spring. You'll learn a lot there, too.
ETA: Dang, I really miss when Fox Soccer Channel had all the big leagues. You couldn't watch every match like you can now, but I would always have it running in the background at home. There was always a match on.

When I first got into soccer I Wiki'ed every competition and team I saw. It helps a lot

Also I would suggest DVR'ing Match of the Day on NBCSN.
