I am a so so cook.
So, basically I use yellow onions for hot foods ( i.e. soups and gumbo ) and red onions for cold foods ( i.e. sandwiches and salads ).
What type do most of you use for your cooking?

I use yellow for everything on the stove.
I use red on the grill. Don't really like white onions.

I use yellow for soups, gumbos, chili, beans, etc. Everything else, I use sweet onions. Except w smoked salmon, that gets red.

red onions if eating raw. I rinse them first though. I also discovered this really effective technique of infusing water with rosemary and then soaking or rinsing the red onions in to get rid of the volatile sulfur compounds. The red onions pick up a slight hint of the rosemary which is a nice nuance.
