Mad Season is probably one of my favorites.
One of Layne Staley's best vocal performances.
Rive Of Deceit

Also, Coffee Creek was a cover band that was made up of the original members of Uncle Tupelo and Brian Henneman (Bottle Rockets)
you can download the mp3s from one of their live shows at Cicero's in St. Louis (June '92) here
edit: they never recorded and original, studio tracks

sunset rubdown (spencer krug of wolf parade)
I'm not sure if Wolf Parade qualifies as "famous" and I'm not sure I would even call Sunset Rubdown a side project since the quality and quantity of their output became at least equal to Wolf Parade, but any chance I get to pimp Sunset Rubdown, I'm taking it.

Yes! Sunset Rubdown put out some really great shite. Definitely on par with Wolf Parade. Saw them in 2007. Saw Wolf Parade in 2006. Really lovethose bands.

Unified Theory
Chris Shinn - Lead vocals/guitar (Everything Is Energy/Live/son of former Hornets owner George Shinn, but talented nonetheless and a genuinely nice guy)
Christopher Thorn - lead guitar (Blind Melon)
Brad Smith - bass/backing vocals (Blind Melon/Abandon Jalopy)
Dave Krusen - drums (Pearl Jam/Candlebox)
Wither

I saw Wolf Parade live in '08, Sunset Rubdown in '09. Both great shows. Krug is probably my favorite songwriter of the past decade. I wish he would go back to making more guitar-centic music.

Treat Her Right was Sandman's band before Morphine.
Good shite.
The Traveling Wilburys was about as star-studded a side project as there ever was, if not the most.

I don't know about the best, but it is up there for most amusing. The Pleasure Barons were a side project of Mojo Nixon, Country Dick Montana and Dave Alvin

Brad Whitford of Aerosmith and Derek St. Holmes, the great underrated singer for Ted Nugent released an awesome rock album in 1981.
Whitford/St. Holmes---I Need Love
Toni Iommi's first solo album rocked. Performances by Dave Grohl, Ozzy, Henry Rollins, Billy Corgin, Ian Astbury, Brian May, etc. was a helluva album.

The Hotrats (originally the Diamond Hoo Ha Men) is a cover band formed by Gaz Coombes and Danny Goffey as a side-project from their main band Supergrass. The band is named after Frank Zappa's album Hot Rats. The duo recorded a set of covers with producer Nigel Godrich for an album entitled Turn Ons in the vein of David Bowie's Pin Ups which was released in early 2010.
The Hotrats - "(You Gotta) Fight for Your Right to Party" -- done in the style of Pete Townshend/Who c. 1970
