I'd like to try cedar plank salmon myself, but where can I find a plank in Baton Rouge? Think Goodwood hardware would carry something like that? TIA

I have never seen treated cedar. It would be counterproductive to do so.

You can break those cedar fence planks over your knee.

Whole Foods usually has them. Make sure to get a few pieces of the house smoked salmon in the case for a little snack, delicious!

Haha

I found some at Walmart neighborhood market. Found some that are thin, that you can roll up for asparagus, etc.

Can also do cedar plank shrimp, and it comes out great.

Soak your cedar planks in water for a hour or two, then throw them on you raging fire to char them for 2 minutes.

Yes, you burn your wood until it is black/almost black, flip the charred side up, and put your shrimp or fish on that, lower your fire, and commence cooking.

It imparts a very nice wood and smoke flavor, while shielding your delicate seafood from direct heat, plus, the moisture from the wood comes through to help minimize drying out.

Keep in mind, and you will see this for yourself, most of the moisture in your wood cooks out in the charring process. So don't count on your cedar plank serving as too much of a moisture bank during cooking, but there is some that still comes through at this stage.

Thanks, I was actually planning on grilling shrimp, but I will probably put them on the plank as well.

Cutting up fence boards isn't a bad idea. I didn't realize you were supposed to toss these planks after using them once.

These can only be used once? Then tossed?

The good ones can be used 2 or 3 times, especially if you keep your heat/ flame low as you should when cooking salmon. The fence planks can as well. If you get a cheaper thin one then it may burn away with one use.
