I've had them fresh, still kicking and fried whole. They are pretty tasty. All were caught in fast moving clean water, not a mud hole cesspool.

Whaaaat?! Rainbow in Laf? That's crazy. If they're not caught by spring won't they die? I caught a mess of them out of the White River this past summer and they were delicious fried. Actually, the fried fillets were some of the best tasting fish I've ever had.
