How I make biscuits (usually)

Since my 2 year old decided 5am is an appropriate time to wake up I decided it was as good a time as any to make biscuits.
Mix flour, soda, powder, sugar, salt and butter until coarse and some pea sized chunks of butter remain.
Next add the milk and mix briefly (used milk+tsp of vinegar since my buttermilk had expired)
Roll out the dough on to a floured work surface. Dust a little flour on top and gently knead 5-6 times. I give the dough a quarter turn each time.
I try to pat the dough into a 4x8 square but I'm not too precise about it. I cut them into even-ish squares with a floured knife.
450 for about 12 mins does the trick
Side view: Added this pic to show what the biscuit looks like after kneading. It has little "layers" of dough. They usually pull right apart - no need for a knife.
Time to eat! I usually prefer a little blueberry jam or some Steens and butter on mine.
My wife prefers drop biscuits but this is my favorite way to a make 'em given I have the time and don't mind a little mess. The texture is so much lighter and the flavor is fantastic. How do you make your biscuits??

Looks so good.
I didn't know milk and vinegar could be a substitute for buttermilk, but I don't really bake much.

I grew up eating Jiffy Biscuit mix. Every time my siblings and I stayed at my great grandparents house, they would wake up at the arse crack of dawn and make this huge breakfast spread for us (plus all the Coke in a bottle we could want). Dont get me wrong I've eaten plenty of canned biscuits and I do like Mary B's, there's just something about biscuits (pancakes too) from scratch that I love.
ETA: you can sub "sour milk" for buttermilk. Just add 1tbsp of vinegar for every cup of milk and let it sit ~10 till it thickens.

I've always liked Bisquick mix for my biscuits, but those look awesome. Will have to give it a try.
