Let's talk geese

First of all...$50 per bird at stores? What's the deal with this?
Golf courses in the North would hire snipers to exterminate these "rats" which were very abundant. I enjoyed quite a few geese when I was young because my father would hunt them, but never thought that I'd see them being sold for fifty bucks, especially for a meat that can become joyless and dry if not cooked properly.
I haven't had goose in decades, but when I do see it in stores and look at the price tag, I pass.
I guess I'm not understanding why an inferior protein can command such a high price.

The same reason prices for lamb are so out of this world in the US, demand low enough to create scarcity.
I was amazed shopping in the UK at the low prices for both goose and lamb, but they eat both often, As a matter of fact that would be the most popular holiday combination in a lot of the world.

Yup, the first x-mas I spent in the UK this was for dinner at the in-laws. Quite possibly my favorite holiday meal.

Look again today. I bought one at WalMart a few years ago on the day after Thansksgiving. They had slashed the high price down to 99 cents a pound. I bought one for $10.
It's worth $10, but not $50. You could get a whole packer brisket for $50 or less.

I've got a spec goose you can have - shot it yesterday and going into freezer tonight if I decide not to roast it.
Best tasting bird besides teal out there....IMHO.
