Roast Duck = Bacon Cheeseburger

I have noticed a similarity between a slice of roast duck breast and a bacon cheeseburger.

duck meat = hamburger
fat under the skin = cheese
seasoned skin = bacon

I roasted a duck yesterday. Today is leftover duck and hard boiled egg gumbo made with a dark roux using the duck fat as the grease and a stock made from the bones. I reserve the plucked meat and add it last so it doesn't overcook.
