Dexter Russell fish knife for skinning. Often referred to as a beaver knife. I skin probably 200 animals a year with it. Also will bust out a skinner that was handmade by my great grandfather and a fixed blade buck that was my grandpa's.

I use surgical blades from work, disposable and alway on hand. Never have to re-sharpen, just slap a new one on and get to work

While I was in Missouri huntin last week, we had a guy with us that seemed like he used to be an outlaw back in the day. Well one of they guys shot a buck and the cleaning shed that was available had about 3 people waiting in line. The guy went to the corner of the property and cleaned that deer in COMPLETE DARKNESS and had it quartered and in the icechest within 10min.... I asked him if he used a headlight...he just looked at me and smiled, all he said was, "back in the day, all i needed was 5min and a cigarette lighter"
I got a good laugh out of it
