I'm thinking maybe a Pinot Noir? I had a floral, fruit forward white blend while cooking it but that bottle is gone and I'm thinking it's settled more into red territory now.

Maybe a Shiraz or a Cab? Needs to be bold and dark and with a little oomph, right?

If you suggest it I probably have it on one of the racks.

No, you don't want bold and dark. That's why your first instinct was pinot noir. Other good red would be Beaujolais. For white go with dry reisling or Gewurztraminer.

I've got a beuajolais I picked up the other day and I'll follow it with a Pinot Noir.
Thanks

Rose! Either Pinot Noir or Grenache Roses' were made for pairing with our cuisine.

Go with whatever you feel like drinking at that exact moment. It'll pair perfectly.

With gumbo I'd want a spicy, medium-bodied red. A malbec, cotes du rhone or rioja would be my choice.

Pinot I more associated with more straight-forward, light cleaner flavors like roasted vegetables or grilled chicken.

No kidding.

Last thing I want to think about is hoity-toity wine pairings with my seasoned swamp mud.
