Broiling some chicken thighs and heavily seasoned red potatoes. Got lots of leftovers to choose from:

In fact, anyone have a good chicken and sausage gumbo recipe? The two I have use whole hens, and I rather just buy some thighs.

Does the recipe really change if you're using whole hens vs. thighs? No. Just less cooking time required.
