I love making these quick, "homemade" individual pizzas for weeknight dinners or lunches. Its a great way to experiment with new toppings as well.

I always either throw them on a hot grill or in the oven for a few minutes to get the bottom a bit crunchy, then just add whatever toppings.

Today I just used bacon and fig goat cheese, salami, and arugula. It was legit.

I usually use Pitas. Almost bought naan the other day though for this purpose

can you explain why people put arugalu on pizza? it gives color, but it's like a salad on pizza. i find it a strange yet accepted topping. just curious, not criticizing.

Why do people put pineapple on pizza ? It's a pizza not a fruit cocktail.

OP, I've been interested in doing this on my kettle grill. Any tips ?

I love eating the Naan and fried eggs in the morning.

I've used Naan before as well. Works well for a quick meal.

Arugula on top is common all over Italy...so I guess it's an Italian thing. "con rucola" is the way I like my Margherita.
