Need an easy and good fried chicken batter and seasoning recipe

I do not eat chicken, matter of fact hate it. I am going to surprise the in-laws with trying to make some for a tailgate or picnic.

Please try to give me something simple as possible

Just go to Popeye's and quit trying to impress your in-laws. They're going to hate you regardless.

Wash the chicken pieces well, and then roll them in flour, seasoned heavily with salt, black pepper, and a little garlic powder. Fry in 3 inches of oil at @330...starting at 350 when you put in the chicken. Cook and turn until golden, and the "frying" stops. Drain on a wire rack.

This will give you an even crust that won't be too thick or too dark. Don't crowd the pan while frying.

google a "popeye's recipe". most will get you close, but I think the "secret" ingredient is white pepper and letting the chicken sit a bit while battered for extra crispiness.

Make sure your chicken and batter are under 40 degrees. Google any standard batter recipe. Marinate the chicken overnight if you want a special taste

330-340 is a good temp to fry in. I find beef tallow (shortening) works the best. It'll go for 10-12 minutes. When it Temps at 160 it's good

If you have never fried chicken trying to surprise your inlaws is not a good time to try.

More than likely you will undercook it and your inlaws will bite into a piece of med/rare piece of chicken.

Here's a dry batter mix based on Popeye's. I tried it and it's good but it might be too spicy for your guests. Maybe make batches if both spicy and mild and give them a choice.

If you want a good sauce, here's a Canes sauce knockoff recipe that's pretty good, especially if you let it sit for at least two days in the fridge before serving.

Fry it naked...... my PawPaw did it all the time. Get a family pack of wings and legs, srason them with creole seasoning and fry them. Pretty simple with no batter involved.

soak chicken in a pan/tray of hot sauce.

dredge in flour seasoned with tony's

fry.

Pretty simple.

I use a milk/egg bath to soak the chicken in.

Dip chicken in flour, black pepper, tonys, and garlic powder. (repeat if you want a thicker batter)

Fry.
