Deer Processing Question

Do you guys see any issues with de-boning deer , vacuum seal and freeze, then thaw later and grind and mix to make sausage or just seasoned meat and then re-freezing? I heard somewhere that this was not a good thing to do but I don't know. In the past I have always just done it fresh but I want to put some up and then grind and mix a bunch at once.

We don't even vacuum seal. Just put the chunks of deboned meat for sausage and ground meat in a garbage bag in the freezer. Keep adding to it. Get it all done after the season.

i always thought there was a bacteria/quality prob with this and u arent supposed to refreeze meat.
