Making smoke sausage...need tips

I've never made it before. I have about 15 lbs of deer and going to get about the same in pork. I need to know how much seasoning and what kinds, smoke time, etc. I prefer green onion jalapeño. Not a damn clue of how much to put.

Sausage making/smoking tips try here for some smoking tips. you can also find some recipes and/or buy some spice mixes to use.

I'm a fan of Art's #3 from Targil's in Opelousas, just add green onion and jalepeno. It comes in a package for 50 lbs.

You should pick up a packet of curing salt as well if you want smoked sausage.
