I'd ease into it. Start with some hero westerns with John Wayne like the Horse Soldiers. Maybe do a little Bonanza watching. Rio Bravo and the Magnificent Seven are also good ones.

Your next step should be Gold of the Sierra Madre. Awesome stuff. This will help you transition into the anti hero westerns and the more intense ones like Outlaw Josey Wales and TGTB&TU.

Only when you know you are ready should you go after Once Upon a Time in the West and Unforgiven. Those are master peices and might be too much for virgin eyes.

Dances With Wolves is awesome, don't let anyone tell you different. Find the extended version though. It makes more sense.

Edit: You will recognize some young, unknown actors. Big plus is you will see the most beautiful actress ever, Grace Kelly.

I was just reading about Dave Rudabaugh. He was the only outlaw to have interaction with Wyatt Earp, Bat Masterton, Doc Holliday, Billie the Kid, and Pat Garrett. He ended up getting shot down in Mexico at the age of 31 and then beheaded with a machete and his head put on a pike for 3 weeks before they took it down.

He was in the Lincoln County War and also at Tombstone and Dodge City. Wyatt Earp was hunting him down when he met Doc Holliday.

They out to make a movie about Dave Rudabaugh. Christian Slater played him in Young Guns II as Arkansas Dave. But, he ought to have his own movie.

Lonesome Dove - the Goat western for me. Robert Duval and Tommy Lee Jones at the very top of their games. And Diane Lane was gorgeous.

Good Bad and the Ugly - quintessential Eastwood with great turns by Lee Van Cleef and Eli Wallach.

Outlaw Josey Wales - Another classic Eastwood movie in a somewhat more realistic and gritty style.

Watch Rio Bravo and El Dorado - two very similar (almost identical) movies from the same director (Hawkes) and star (John Wayne) with different supporting casts that are fun to compare and contrast. And take a side on which is better.

And not so much to the OP, but for those of you have seen pretty much everything western here's one - give the old mini series Centennial a try. At last the cattle drive episode(s) with Dennis Weaver leading a drive. Not high art but I enjoyed.
