Reheating Boudin Balls

Traveling to Memphis Sunday. Repaying a favor up there and carrying along some Tony's Cajun Balls.

Given that they'll stay overnight in a hotel fridge, what's the best way to transport them /reheat them for best flavor?

Drop them in a fryer or bake them in the oven. Can you not buy them frozen and fry them when you get there?

Likely not. Its a present for a TV station that probably only has access to a microwave oven. Not sure if anyone had some tricks (put immediately into a cold ice chest), that type stuff that would help.

Somehow, I think a brown paper bag fits into this picture...

Whenever I want to take boudin balls out of town I buy them frozen, usually from Ronnie's. I let them thaw before cooking them. Since I am usually using someone else's kitchen I bake them rather than fry to limit the mess. They aren't quite as good as fried, but most out of towners don't know the difference, and they generally are quite pleased with the boudin balls.

I don't know how to reheat boudin balls that have already been cooked without them becoming soggy.

I've put them in my oven on a rack that I use to drain fried food. I put a piece of foil on the lower rack and warm a while on about 275 or so, sometimes 250. They're not as crisp as fried, but they still have some crispy texture. I reheat egg rolls the same way and that works well. A convection oven probably does a better job.

I have no idea how to warm them in a microwave without ruining them. I'd just bring boudin if that was the only way to heat boudin. Put them in glass dish, sprinkle some water over them, cover in plastic wrap, punch a few tiny holes in the wrap and cook on a lower power until warm enough. Works great every time.

Why not just buy regular boudin then? I feel like it would heat better in a microwave than something fried.

Tonys was not much help on this.. Lots of shoulder shrugging.

I am going to (confidently) tell Memphis to nuke them about 75% power in a brown paper bag till hot.

Heck--it's Memphis. The institutional expertise on Boudin Balls can't be that deep....

I think the texture is going to be bad. Why not just bring boudin?

just sprinkle them with water and put a glass of water in the microwave with them when reheating.

Just to finish this out... The recipient in Memphis put the balls in a 350 oven for 10 minutes--standard reheat. Put them on paper towels just in case. Then scarfed them down! Even his health nut wife tried one and loved it till she Googled boudin. Probably purged after that.
