I would say Stella...

It's essentially Belgian Budweiser, but bars can charge $1 more for it because it's either in a fancy glass or a skunky arse green bottle.

So Rouge is the only one that answered me so far. If I wanted to be seen as having great taste in beer what would I have in my hand? What is the go-to beer of the beer snobs? Something easily found in Louisiana year round.

These are all available year round in houston

I drink a lot of seasonals, so I really don't have a "go to" beer that I drink more of than anything else. I would guess if I had to say, it would be Boneyard RPM or Laurelwood Work Horse.

Most of the places I go to have 100% rotating taps, so there is no fall back beer. You have to make do with whatever random beers are on the menu. That's why I mainly frequent places that have digital taplists that I can look at on my phone, so I know what's on tap ahead of time.

This is inherently contradictory. We wouldn't be snobs if the go to was something easily found. The go to right now is clearly GITM, but that's not easily found year round. So are you asking what a beer all mavens can agree on that is more readily available? SOmething like Founders All Day or Lagunitas?
