Wonton wrapper appetizer idea & white cheddar queso dip - ideas

This Saturday for the bar party I think I am going to make a white cheddar queso dip.
Anyone have any ideas what I could fill the wonton cups with that would compliment the white cheddar queso
Just looking for something new to bring to the bar for the game

going to have white beans and smoked sausage, im going to attempt this appetizer, and few other people are going to contribute. We do this sort of thing quite a bit with the regulars

Chorizo with pico de gallo on top. Of course, you can buy those tortilla cups and do the same thing, though I don't care for those chips so much.
Last night on MasterChef Canada, one of the canapes was a tartare atop a fried wonton square. Could do something like that with Mexican seasonings and some pico. They also made an upside down somosa which looked tasty and that mixture could go on wonton, as well, or something along those lines with Mexican flavors.

For sure either cream cheese, or Neufchâtel cheese, but also include pineapple chunks. It is fattening, but the bomb!
