Seafood sausage?

Went to Boucherie on Saturday. A friend ordered the scallop dish which came with a seared scallop and then "scallop sausage"

The scallop sausage appeared to be just ground scallop in a casing. It was honestly horrible and I am typically a fan of Boucherie. The sweet flavor and delicate texture of the scallop was lost. It tasted not fresh and the texture was basically mush.

Why do places try to make seafood sausages? Outside of an okay crawfish sausage, I have never encountered good seafood based sausages.

I had a hunch this thread would be about that particular dish

My wife had that same dish, and I didn't care for that sausage either.

I had shrimp sausage once and I will never again eat seafood sausage. Tasted like rancid dried shrimp.

It's either a waste of good seafood or the use of old seafood. Not good use of seafood either way.
