Pressure cooking

My wife informed me yesterday that we have a pressure cooker. We have been married over 5 years, and I have never seen that dang thing. I know that many people swear by them. Anybody got recipes or at the very least ideas of what to cook in it?

The pressure cooker is my absolute favorite kitchen gadget. Red beans, short ribs, and many other things in less than one hour.

I really like it to make chicken, ham and beef stocks.

I generally just hit up my google and find a recipe for whatever I'm going to cook. After a while you can just wing it.

Soon as the weather turns a little cooler, search for a chicken soup recipe.

The PC has a million different uses in the kitchen. Best way for broths/stocks, cooking rice or beans( or rice AND beans). Need some quick chicken for chicken salad or something? Pop a bird in it and in 20 minutes is literally about to disintegrate falling off of the bone. Makes the best green beans or greens too. I wouldn't really know of a recipe specifically designed for the PC, but I use mine all the time for shortcuts.

What I do like to do:

Country Style or Short Ribs
Put them in the PC with some stock/apple juice and a dash of liquid smoke or worchestershesteristerchire sauce
Cook for about 20 minutes
Pull them out and finish them on the grill


Korean Chicken Wangs
Lots of wings in the pot
Add about 3 Tbs of Gochujang (fermented pepper paste)
Add about a cup of soy sauce
garlic
green onions
brown sugar
pear puree
white pepper
fill to line with stock
Cook for 15-20 and finish on the grill


My pc has saved my arse many a time when a quick gameday party or other event springs up.


If you don't know about gochujang, go to your nearest asian market and get some. I use it in almost everything.

My mom makes a simple but awesome beef stew. Brown large seasoned and lightly floured chunks of stew meat until the look just shy of burnt. Add chopped onions and peeled red potatoes. Cook for about 12 minutes. Relieve pressure, add thick, peeled carrots cut about 2 inches long. Cook about 5 minutes more. Thicken gravy and serve over rice.

We got one a few months ago. It's a 8 qt (Kuhn Rikon) and the inside D is 11" so you can do large pieces of meat. I pre-sear the meat sometimes but usually don't bother. We do chuck roasts in an hour that are fall apart tender. Add potatoes/carrots/cabbage/ etc after about 45 minutes and 15 min later we have beef stew. Ribs are great and we can do 5 lbs of boiled green peanuts in 35 min.

We've cooked whole turkeys in a large canning pressure cooker in 45 min. The meat falls off the bone but it's fork tender.

Lots of recipes on the net (cheese cake anyone?).

They have improved them quite a bit. Depending on how old it may not be as good as some of the newer technology.

I don't care for it that much. To each their own. I know people that cook with it all the time.
