why should I tip a waiter ?

On top of paying for my food, I also have to pay the restaurant's employee. Why aren't restaurants required to pay their employees (atleast minimum wage)

Don't take the job if it's so shitty. What's fair is what people are willing to pay someone to do the job and what people are willing to accept as payment. If you get paid minimum wage then that is what your labor is worth. If you don't like that, you can move on and try to get a better paying job.

If the restaurant paid the wait staff enough that you didn't have to tip they would just add that on to the price of the food. So either way you would be paying for their wages. Same principal as the government taxing a business. The business will just pass it on to the consumer. No small business would be able to absorb either of those expenses and survive if they didn't pass it on.
