Watching some food show and they are at some restaurant where they do this. I don't have the equipment they use but I'd like to try. Not sure how I'd do it though

I can envision Gaston throwing some raw meat onto a vegetable steamer over medium heat, increasing the internal temp to 70-75 degrees before forming the patty and adding the fixins.

I think Gaston eats the raw meat straight out of the grocery store packaging.

What did they say was good about it? I can't imagine it had a crust of any kind? Why not just boil it?

You talking about searing on a flattop then adding water and covering?

Sounds like something Burger King does before they throw it under the "flame broiler".

No

I can't describe how it was done. It was on an episode of man vs food. Put the burgers in raw in some machine and they were steamed. Even steamed the cheese and then added it to the burger

Wish I could describe it better/more

Triple D. Some restaurant in Connecticut or Rhode Island. They put the burgers in a steaming contraption oven thing.

So how would one go about doing this in their kitchen?

Meh, seems like a lot of trouble for a subpar product.
