Propane Smoker Problem

Smoked a pork shoulder on Sunday and couldnt get the thing to smoke at 225. In order to get it to smoke I had to take it up past 300. I did it a few times and once it started to smoke I dropped it back down to 225 and it stopped smoking. So the end product was cooked well enough, but not really smoked at all.

Could humidity influence this? Gonna give it another shot this weekend. Any tips would be helpful.

Even though you're part of that phish group that has pretty much single-handedly ruined the music board, I'll offer some advice. How close are you putting the wood chunks to the heat source? If it's too far away, it'll likely not smoke much.

I am absolutely not part of that group. I just happen to like Phish as well. Please dont group me with those tools.

I put chips in the water pan as well, but I also put some chunks (not chips) close to the heat source. most propane smokers have a pan or something like that which sits directly above the heat source. this is where you put the chunks. the water pan should be right above that and the meat above that.

Its a metal box that slow cooks a peice of meat while smoking it. Thats a smoker. I dont care what you think of the heat source.

Well you are supposed to wet the chips so they smoke not burn. My problem was I should have put the chips below the beer.

If you do not have the chips in direct contact with the flames, then they should not burn.

I thought the chip tray and water pan were separate in those things?

Ya, they are. I just had put them in the opposite order. You are supposed to have chip pan, then water pan. I had water pan, then chip pan. So, as you said it was steaming the chips.

But they tell you to soak the chips in water for a bout 15 seconds before you put them in the pan.
