Does anyone know how to make a decent tartar sauce?

After about my 5th different recipe I'm about to give up. They all taste weird, not matter how differently I approach it each time

I just can't get it to taste like how it tastes at restaurants

Anybody have some good advice or a recipe?

The only thing I don't like about Wow Wee is the fact that they spell it "tarter" sauce.

But Wow Wee Dipping Sauce tastes good and is spelled right!

Haha never noticed that... I keep the dipping sauce and tarter sauce both stocked in my house.

I've made this one a number of times and like it. It's from Kevin Graham when he was at the Windsor Court.

• 2 fresh tomatoes, peeled, seeded, and finely chopped
• 2 fresh jalapeno peppers, stemmed, seeded, and finely chopped
• 12 cornichons, finely chopped
• 2 tablespoons capers, finely chopped
• 1/4 medium onion, peeled and finely chopped
• 2 cups mayonnaise (use Hellman's or homemade)
• 2 lemons, juice of
Change Measurements: US | Metric
Directions:
Prep Time: 20 mins
Total Time: 1 1/2 hrs
1. 1 Combine all the ingredients in a medium bowl.
2. 2 Cover and refrigerate for 1 hour before serving.
3. 3 Any leftover sauce may be stored, covered, in the refrigerator for up to 3 months.

I also make one, but I don't measure. I like chopped olives, capers, onions, cornichon and lemon juice plus mayo. I just add until I like the taste.

Besh made a good one on his show. It's not in his books that I've found. I just guess at the measurements. I've made it about 4 times. Also keeps in the fridge for weeks. Here's the list I made from his show.

He used:
roasted jalapenos
chopped shallot
chopped fresh tarragon
chopped spring garlic or garlic
chopped gherkins or you can use sweet relish
chopped dill pickle or you can use dill relish
chopped capers and a few whole if you like
creole mustard
mayo
vinegar
lemon juice

I think that's it. It was outstanding. I used sweet relish and cornichons. I had everything else on hand.

I love tartar sauce. Sadly, few restaurants make their own.

Alight cool that's a little different from what I've done with the tomatoes. Although I do like it to be a little sweet, and I don't see any sort of sweetener in it. I'll try it out.

And is Wow-Wee just at any old grocery store? Not sure I've ever seen it before

It's made locally in cutoff. I buy it at rouses or Nunu's.

Play with the various ingredients and add some sweet dill to those until you get a flavor you like. Going for the exact taste in a restaurant is harder than coming up with one that you like.

I do a simple one with Blue Plate, a finely chopped onion, dill relish, garlic powder, celery salt and a dash of Worchestershire sauce. The wife won't let me fry fish without it.

1 cup of BP Mayo
1/2 small onion chopped very fine
2 tsp of dill relish
garlic powder (roughly 3 shakes)
celery salt (roughly 3 shakes)
Worchestershire Sauce (couple of shakes)

Just mix it all in a bowl and you're good to go. Play with the amounts of dry seasonings to your taste. Other options to add in are a touch of lemon juice, chives and/or La Hot Sauce.

I make a very simple one. No measurements , really.

2 cups mayo
2 T mustard
3 or more T of sweet pickle relish
Dash of garlic powder
A little minced shallot or red onion
Squeeze of lemon

Mix. Refrigerate, adjust seasonings and enjoy.
