My fiance surprised me on Sunday with a trip to rare cuts on magazine and told me she'd buy whatever I wanted. after talking with the lady that owned it, I decided to go with the wagyu ribeyes. From what I have read about them, you have to watch the temperature of the grill or you will ruin the meat.

Anyone have any tips with preparing these?

Check out the Ducasse Method.

Note that medium heat is used.

Use the reverse sear on the grill method. I posted a thread with pictures on it last night. It was amazing, and the eveness of the temperature was fantastic.
