Whats the best way to cook a cut up whole fryer chicken?

I was just going to put it in a pan and roast it in the oven

I like mine country cut. I cut the wishbone as a separate piece.

i usually cut the backbone out and lay it flat like this



i save the backbone for chicken stock

Sprinkle it liberally with creole seasoning or season all and fry it.

My Paw would cook that often for us as kids and we tore it up. Its my favorite way to eat chicken.

The best way to cook a whole chicken is Opelousas chicken which I introduced to this site.

Stuff it with whatever you have handy. I usually stuff it with whatever veggies I have in the fridge, along with some rosemary from the garden. I then season the outside with a mild rub. Pre-heat oven to 350. Place chicken in dutch/french oven and add a little wine or hard cider to the pot. Add in some carrots, cover, and cook to your liking. I like it pretty fall apart, so I sometime drop the temp and cook it a little longer. I usually end up with enough chicken for two meals for two with a small chicken.
