Fresh Conch Ceviche for Tomorrow

Friend brought some fresh conch back from Bimini Sands yesterday and brought me about 3/4 pound.

Decided to make some Fresh conch ceviche(All amounts subject to your own tastes: Fresh lemon, lime & Orange juice, mirin, green onion, purple bell pepper & gold bell pepper, garlic, shaved ginger & garlic, habanero, tomato & touch of brown sugar & little jerk seasoning, kosher salt......little cilantro as well......will add the bulk of the cilantro tomorrow after it marinates over night

Nice. My old neighbors in VA would always make the Italian version - scungilli. Yummy stuff.
