Fishing near Santa Rosa Beach, Florida

The wife has me going to the beach this weekend to a place on Santa Rosa. Does anyone know of any good fishing down there that I could try? I have no idea about surf fishing along there or if there is some structure nearby. We won't be bringing the boat so I'm limited. Any ideas?

Charter a morning trip out of Grayton if you want to bottom fish.
The lakes have reds and trout in them. You could rent paddleboards out of Watercolor and fish a ton of shoreline. Look at that lake on Google, it goes all the way behind Grayton.

My buddy's uncle has a house on the sound, and he just said they catch the most fish straight off of the piers. His uncle's pier goes out 120 yards into the sound though

Piers would be interesting as they take you over several parts of the beach and sandbar system. I've been thinking about just surf fishing as well. I guess it would be best to use a modified drop shot kind of rig to be able to cast beyond the breakers and keep some bait suspended above the sand.

It gets deep quick in that area. Rent a kayak and you can catch snapper, king, mahi a mile out.

You go a mile out in a kayak? I was at Santa Rosa a couple months ago and was getting nervous after a couple hundred yards.

Used to live across from Elmo's in Flamingo Village.

Going to have to check a soundings map. This could be more fun than I thought. I typically get up around 5:30 but the rest of my sleeping and napping clan doesn't stir until 8 or later. There might be some quality time on the beach after all.
Just checked NOAA Chart 11388. It goes from 4 to 9 to 25 to 45 very quickly. That means some large fish might be lurking pretty close to the beach. Now I'm looking forward to going.

I have a stupid question but didn't want to start a thread about it:
I'm going to Gulf Shores on a family vacation in a few weeks and I've always wondered if it would be possible to catch anything from off the beach at night? Sometimes I see people fishing out there but it's usually limited to the daytime/early morning..
I'm more of an inshore fisherman, I've never really fished off of a beach before so I sorry if I sound ignorant
I asked about the nighttime because it seems like this will be the only alone time I get
