What becomes of all his TE records and awards from the NFL, are they all void? Are all his stats automatically moved to the WR category? Would it make his career less impressive when compared to other WR in the league the past couple of seasons?

In my opinion, if he wants WR money then his statistics should be counted as a wide receiver. I honestly think if he wins this arbitration the saints should just cut ties and trade him. I personally don't think he's worth the money he wants. He's one of the best tight ends in the league, but how good would he be outside of this offense? I don't see him putting up the numbers consistently like Tony Gonzales did with quarterbacks that weren't even close to the level of the guy who throws to Graham. You didn't see Gonzales bitching and moaning about being a wide receiver.
