Going on the Keg first thing in the morning!

Waiting to be injected late tonight and rubbed all up and down in the morning.

Leave a little more fat on that jewel and you won't have to fool with no injecting.

They trimmed the heck out of that thing huh? Or is there some on the other side we're not seeing?

It was over 14 lbs. I trimmed some fat from one side. There's a nice fat cap on the other side.

Sounds like a nice one. I had a almost-19 lb one in my basket yesterday but wasn't sure I wanted to go that route this wknd so I put it back. Brisket is getting expensive...

Got the brisket injected and back in the fridge until tomorrow morning. First thing tomorrow it'll get seasoned with dry rub and put on to smoke.

I can't say honestly. I've never had two alike. Just going by temp. Probaly late afternoon though.

never injected one before, but low and slow you can't go wrong, sure its going to be great.

That is a SpitJack Meat Injector System. A couple of years ago I setup a group buy with the owner. A few forums got in on it. Got a PDG deal too.
