Freaks and Geeks and Undeclared probably. Fox had a show in the mid 90s called Profit that only ran for six episodes that I loved. That's My Bush on Comedy Central was another good one.

Jericho.
That half assed second season that they made in response to the fan outcry to the cancelation was an insult to the first.
Stepped away from what made the first season good to rush forward and focus on the political backstory stuff to give the story a semblance of closure.

Minor segue here; I can only imagine the reactions of everyone involved when they shot the Batman/Green Hornet crossover episode. Telling Burt Ward he gets to fight Cato (Bruce Lee), while wearing his Robin suit... I think I would have quit!

Another one that doesn't get a lot of love is Earth 2.
