Fresh Guac Recipe......

looking for a legit homemade guac recipe.....

i've heard of people roasting jalapenos to put in it, different things

what do you guys do?

Some of the best I've had was at Boudro's in San Antonio.

Boudro's Famous Guacamole Recipe
Ingredients
•Juice of 1/4 of an orange
•Juice of 1/2 a lime
•1 avocado seeded and scooped out of skin
•2 tablespoons roasted and charred Roma tomatoes diced
•1 Serrano pepper roasted seeded and diced
•1 tablespoon medium dice red onions
•1 teaspoon chopped cilantro
•coarse ground salt to taste (sea salt is better)
Directions
Squeeze juices into bowl. Add avocado and coarsely chop. Add onions, roasted tomato, serrano and cilantro fold into avocado mixture. Add salt (more is better). Result should be crudely chopped not mashed. That's it.

Ripe avocados, hot salsa, cumin, garlic powder, cilantro, onion powder and some jalapeno. I don't measure, just taste until right, edit;

The basics are avocado, onions, Roma tomatoes, Serrano chiles, cilantro, and for mine a bit of garlic. And lime juice of course as well as salt and pepper.

I normally use 3 avocados, 2 roma, 1/4 onion, 1 lime, just a bit of cilantro, 1 Serrano, and maybe 2 garlic cloves.

Crucial to mash avocados prior to putting the rest of the stuff in. Add tomatoes last.

My Mexican friends say roma tomatoes and serranos are crucial.

I typically do 4 ripe avocados, about 1/3 of a purple onion, about 3 cloves of garlic, 1.5 limes, cilantro, and 2-4 serrano peppers.

I hate tomatoes.

When I want to get freaky I'll use two limes, scale back the onion and garlic a hair, and toss in a finely diced Granny Smith apple. It's a fun treat.

ETA: Oh, and salt and pepper. Not too much salt.

Six avocado
Juice of a lime
Pinch of salt
Two roma tomatoes deseeded and peeled
A little minced garlic
A peruvian sweet onion minced and sautéed.
One serrano pulverized. Seeds removed.
A little cumin and oregano to taste.

May need to add a little more lime juice.

Then a twist... crunchy fried bacon on top.

Good stuff.

Do you have a good salsa recipe you like? If so just mix it with some avocado.

Fine Cooking did a piece on guacamole a few months back. They have a basic lime, onion cilantro recipe but also some different things to try like cucumber pineapple guac, seafood guac, and blue cheese-almond guac. Let me know if you try one. As usual I have only half the stuff to make each recipe in the house right now.

FYI that grilled cheese with bacon and guacamole is killer. Definitely worth the effort.

I usually make two batches... one with serranos or jalepenos. The other uses habeneros for the fruity aromatics and extra kick.

Considering I'm usually using guac as a means for cooling down something a little extra spicy...the habenero version is only used for dip.

No need to trick it up. The salt level is important. The real key is getting perfect avocados. Lime to keep it from turning on you. I also add celery salt and minced garlic with the rest of the basics.

Thanks for this. I made it for the family yesterday and it was gone in no time. I added a little bit of smoked paprika and celery seeds as well.

+1 on Kingwood Tiger's Boudro's recipe. I've made it for years and love the stuff.

One of the few restaurants I enjoy on the Riverwalk in San Antone.
