Water was rolling when I dunked them, after 4:30, I cut the flame and added shrooms and more sausage and whatnot, so that's why ya see the water up so high there. I thought that made for the best pic.

The onions, garlic, lemon and orange, seasoned the water before the first batch. I dumped those before bugs went in, then re added for the soak both batches.
