Followed the recipe below except I didn't measure. Really good flavor. I increased everything. I had 2 lbs of beans. Will repeat this one many times.

Thought about garlic, but after having them, the shallots were perfect. Also thought about crumbled bacon or pancetta. Good side. Used the haricots verts from Sam's.

I absolutely love shallots. Probably the most under utilized produce on the planet.

Classic beurre blanc demands shallots, but other things could also very well use this delicious goodness.

Yikes, that's a lot of butter and oil. Did it need all of that? I like to use as little as possible - I'm eating veggies for a reason.....
Edit: Maybe that's not too much. If you get 4 servings out of it, it's only a little over a tbsp oil per serving.

I had two pounds of beans and it didn't really need as much as called for, but for that amount, I didn't find it to be too much at all. It wasn't overdosed. You could skip the butter and just use olive oil if you want or just toss everything together in a skillet with no fat at all and rely on the other flavors. I think it's a recipe that you can tinker with to suit your desires.

The expensive but wonderful oil to choose is walnut oil.

Pine nuts or walnuts would also be good with this. It's a basic recipe. You can change it up.
