What's better? Yard egg or grocery egg?

I think yard eggs taste better. Wife thinks that they're nasty and won't touch them.

Yard eggs are a lot richer and darker. I like them but they will also take on the flavor of the feed. Do what I do, cook them and don't tell her and she will eat them.

Try duck eggs if you can get your hands on them. A soft boiled duck egg with salt and pepper and a piece of toast is pretty hard to beat.

Yard over store bought easily is the answer. You get the egg when it is laid from a hen that you control the living conditions of the bird.

I have a friend that raises both which is one place I get them but a lot of people that raise chickens also raise ducks.

Yard eggs by a mile. Also, yard bird by a 100 miles over those "funeral home" embalmed chickens you get in the grocery store

Don't know where you live, but there's a group that sells them at the Red Stick farmers market on Saturday mornings.

As far as yard eggs are concerned to store bought eggs, it's yard eggs by miles IMO. There's a sizable flavor difference and texture difference in the way they cook. For using them as an ingredient in baking or pasta, there's also a pretty noticeable difference, especially in color if nothing else. I've been told that has a lot to do with their diets, and carotene. I know some people swear by crawfish shells. No clue, but regardless of color, the flavor is significantly different when you get some good yard eggs to that of store bought.

I knew a guy that sold "free range" chickens. They were in a pen about 10ftx30ft. He kept anywhere between 2500-3000 in it. He sold the shite out of them. I just found it funny bc he told everyone his birds were "free range".

But if you're in Hammond area, there's a guy in Springfield that I got some from at one point. I wouldn't think that would be too difficult to find more locally for you. Might want to ask around a bit. A lot of these old farmers still haven't gotten plugged into the internet just yet, and don't know how to use it. plus, I'm sure there are plenty of people with their own chickens in that neck of the woods.

Actually live in killian. Right down the road from Springfield. Yard eggs are everywhere. Just never noticed duck eggs anywhere around here.

My bad. Yeah, that will probably be a little tougher to locate.

I'd call the local Agriculture and Forestry Dept and just ask if they know who might be into that around there, or check out the Red Stick Farmers Market and find out where they are located. I can't remember off hand, but there are like three booths selling yard eggs, and one that also sells duck eggs. If close, then you could probably go straight to the source later on.

That's the only reason the yolks are darker is the carotene from the grass they are eating. The commercial industry puts ground marigold into the feed to mimic it, but the yard eggs still come out darker.

As for Double Yolks... It just means the chicken double ovulated and the yolks were caught in the same stage when the shell layers were beginning to be deposited.
