Pork Tenderloin Recipe Suggestions

Anybody have any go-to pork tenderloin recipes? Specifically for baking a loin that's about 2-3 pounds. Any good rubs or marinades out there?

Rub with olive oil, salt, pepper, rosemary, basil, thyme (just a pinch- a little goes a long way), then coat with a light coating of brown mustard.
Works better on the grill because most of the mustard cooks off, but I'm sure it would still be good in the oven.

this is nearly exactly what i have done. i assume it could be done the same in the oven, just without the smokiness.

Make a paste of EVOO, garlic, coarse salt, fennel seeds, and lemon zest...coat tenderloin & roast. Or try this jerk pork rub: LINK
The recipe pairs the jerk tenderloin with seasoned black beans and a pineapple/cucumber salsa...it's a very tasty combo. I cut the recipe out of the newspaper years ago and was happy to see it online now.

Chop into 1 inch medallions. Season, cook in butter on a skillet. Takes less than 5 minutes.

Butterfly the loin by cutting most of the way through lengthwise. Cover with film wrap and pound flat with a meat mallet. In a sauté pan, render two slices of bacon cut into prices. When bacon is crispy, add 4 oz of chopped mushrooms and sauté until tender. Add 2 minced garlic cloves, a little lemon zest, and 2 tablesoppons of Italian breadcrumbs. Mix well and let cool. Spoon mixture onto loin, and spread evenly to cover all but 1/2 inch around the perimeter. Roll tightly and secure with butcher string or toothpicks. Season the outside with olive oil, kosher salt and black pepper. Grill or broil until center reaches 165F.
Also like cutting into large medallions and wrapping with bacon with a little BBQ rub or cajun spice. Grill on high heat. Pork Filet Mignon, if you will...

Tried this the other day and it was pretty good.
Also, try grilling and basting with Dr. Petes Praline mustard
