Pan fried chicken recipe

Wondering if anyone has a recipe for pan frying chicken pieces (with or without bone) that they'd like to share. I'm looking for a spicy version. Just not sure of the prep and how long I should cook it. My biggest fear is under cooking meat.

In a sauté pan or deep skillet you can cover( an electric skillet is awesome) ,heat oil to 325-330. Season flour to taste with salt, black pepper and garlic powder. For spicy, add red pepper to taste. Roll the chicken pieces in the flour well, after washing them. The flour should stick well, but it won't be an extra thick batter.
Fry in batches (don't crowd the pan) until golden brown on all sides, flipping every 7 to 8 minutes. When the "frying sound" stops, and the crust is a dark gold, it's done. Drain on a wire rack.
Make a nice gravy with the drippings and some reserved, seasoned flour.

My memaw made the best pan fried chicken...I wish I had that skill.

350 degree oil.
Paprika, salt, black pepper, cayenne.
Season the chicken then hit roll it in flour. This will keep the seasoning from burning and use alot less seasoning than trying to season the flour.
Use a cast iron if you have it.
