So whats your favortie recipe for backstrap?

Ive seen where people fry it, grill it, and smoke it. I need something good so the fiance will eat it. She tried wild hog and liked it and just ate some deer burritos and liked that as well.

And to keep the thread interesting. Here is a pic:



45-70, 60 yards, hit right behind the head, somewhere near Homochitto. Was actually sitting in a stand where hogs had been seen everynight, I was going to try and line them up and hit them with the 45-70. Didnt work out that way though when she walked up. Sat and watched her for like 20-25 minutes before thinking about shooting her. Really wanted the pigs or a buck, but it was our last hunt.

Put your meat on ice and swap the water out every day for 4 or 5 days, then come get some recipes.

Nice! I like to grill it or pan sear it in a hot arse skillet and eat medium rare. Especially a little jewel like that. She's gonna be tasty.

Some good stuff in the cookbook, meat has been on ice since we cleaned it sunday night.

Now, its got me pretty hooked and I think Ill turn up my search for a lease. Been sort of half arse looking, but need to get one so I can go more.

Like others have said, soak it to bleed it out. Then marinate it and sear it whole (or cut one in half) to medium rare on the inside. then cut them up like steaks. If she likes a filet, she will like that. Don't waste that one in a fryer.

ETA: I see you already soaked it. Congrats on the deer.

Congrats man.

I had some fresh backstrap soaking last night and found myself in a bind. The wife thawed out one pack of hamburger meat to go into a pot of chili. I ended up improvising and diced up some backstrap to go with the hamburger meat and it was a very good decision.

Never had / never will prepare back straps fried. EVER.
